Meshayi, also called meshai or press am, is a Nigerian sandwich stuffed with egg and other components. It is a street food originating in northern Nigeria, but it can now be found across the country.
Ingredients
[edit | edit source]- At least 2 eggs
- Green and red bell peppers, sliced
- Onions, sliced
- Cabbage, sliced
- Curry powder
- Dried thyme
- Salt
- Vegetable oil
- 1 loaf of soft sandwich bread
- Cooked suya meat
Procedure
[edit | edit source]- Break the eggs into a bowl, and beat them.
- Mix in the peppers, onions, cabbage, curry, thyme, and salt.
- Heat some oil in a pan. Add the egg mixture, and cook until the egg is done. Remove from the heat.
- Halve the bread lengthwise. Top one half with the cooked egg and the other half with some pieces of suya.
- Sandwich the two halves together.
- Heat some vegetable oil in a frying pan. Fry the sandwich on both sides until golden brown.
- Serve.
